Hello everyone, Happy Monday!
So excited today, because this is officially my first healthy-ish recipe, and it’s one of my favorites! This overnight oats is so easy to make, healthy, and loaded with fresh strawberries! So, if you’re looking for a quick, fresh, and summery breakfast or snack, this recipe is for you!
WHAT ARE OVERNIGHT OATS?
Overnight oats are simply rolled oats (old fashioned) that are left to soak in a liquid overnight instead of cooking it. Yes, you eat it straight from the refrigerator which makes them perfect for a grab-and-go breakfast or snack, especially on summer days.
INGREDIENTS NEEDED
Rolled oats – In this recipe, we will use old-fashioned rolled oats. I find that rolled oats are the best to use for overnight oats. I wouldn’t recommend steel-cut oats as the texture will be different.
Fresh strawberries – you need fresh fruits for this recipe. I don’t recommend using frozen fruits. Feel free to use any berries! Blueberries are also great for this recipe!
Greek yogurt – I love using original Greek yogurt in this recipe but feel free to use any kind of thick yogurt you like.
Almond milk – or any milk will work in this recipe.
Chia seeds – this adds healthy fats & fiber, and they’ll also help to thicken them a bit for the perfect texture.
Honey – I like to use honey or maple syrup to give a bit of sweetness to the oats
HOW TO MAKE OVERNIGHT OATS?
It’s so simple, all you need to do is combine all the ingredients in a medium-sized glass jar, bowl, or container. Stir until well combined, then cover and put in the fridge overnight or at least for 2 hours. Once ready to serve, stir it well, you can also add extra toppings as desired and enjoy!
(Be sure to check the recipe card below for the full ingredients list & instructions)
HOW LONG DO OVERNIGHT OATS LAST IN THE REFRIGERATOR?
Overnight oats stay good in the refrigerator in an airtight container for up to 5 days. That means you can meal-prepping a bunch of these on Sunday and simply enjoy it during busy weekdays. Just be sure to give them a good stir if they’ve been sitting for a couple of days and/or add a little splash of milk.
