It’s been my favorite baked oats recipe, I keep making this again and again! So, I decided to share the recipe here, these baked oats deserve a spot on the blog and I think you guys will love this recipe too.

INGREDIENTS NEEDED & NOTES
Oats – This recipe is a non-blend baked oats, so old-fashioned rolled oats are perfect for this recipe. These jumbo oats retain their texture even after baking.
Milk – I love vanilla unsweetened almond milk, but you can use any types of milk. Feel free to use cow’s or any other plant-based milk.
Peanut Butter – You can use peanut butter or another nut butter or seed butter of your choice.
Vanilla – This recipe uses pure vanilla extract. I love the hint of vanilla alongside the peanut butter and chocolate here.
Sugar – I love brown sugar, but if you want a healthier option, you can use 1 tablespoon of honey or maple syrup.
Baking Powder – A lil bit of leavener to help the oats rise and achieve the best fluffy texture.
Chocolate Chips – I use about 2 tablespoons of chocolate chips for the mix-in and more chocolate chips on top. I love semi-sweet but feel free to use milk or dark chocolate.

- 8oz oven-safe ramekins
- Medium mixing bowl
- A whisk
STEP-BY-STEP INSTRUCTIONS

Making baked oats is super easy, you just need to combine all the ingredients and bake until no longer runny, but waiting for them to cool slightly is absolutely the hardest part.
- Preheat the oven to 375F.
- Lightly grease two 8oz oven-safe ramekins with butter or non-stick spray, set aside.
- In a medium bowl, combine old-fashioned rolled oats, milk, peanut butter, vanilla extract, brown sugar, and baking powder. Whisk everything until well combined.
- Fold in 2 tablespoons of chocolate chips
- Pour the mixture into the prepared ramekins and sprinkle the remaining chocolate chips on top.
- Bake your oats for about 20 minutes until they’re no longer runny.
- Allow to cool slightly and enjoy while warm!
TIPS FOR MAKING THE BEST PEANUT BUTTER CHOCOLATE CHIP BAKED OATS
- Don’t Use Instant Oats because it will dry out quicker during the baking process.
- You can adjust the batter consistency. If you feel that your batter is too thick or you want a softer texture, go ahead and add another splash of milk
- Baked oats are great for making ahead of time. Once baked, these baked oats can be stored in the fridge and served for breakfast all week long!
HERE’S HOW TO STORE THESE PEANUT BUTTER CHOCOLATE CHIP BAKED OATS
To store leftovers, place them in an airtight container in the fridge. It will last for up to 5 days in the refrigerator!
You can also freeze these baked oats. Wrap them with layers of plastic wrap, then place them in an airtight container. It will last for up to 3 months in the freezer!
Thaw out frozen baked oats in the fridge before you reheat them. You can also transfer them to the fridge at night for a quick-fix breakfast the next morning!

- 1 + 1/4 cups old-fashioned rolled oats
- 1 cup milk
- 1/3 cup peanut butter
- 1/2 teaspoon vanilla extract
- 1 - 2 tablespoons light brown sugar
- 1/4 teaspoon baking powder
- 4 tablespoons chocolate chips
Instructions
